Antioxidant substances which scavenge free radicals play an important role in the prevention of free radical induced diseases. The most commonly used antioxidants at present time are butylated hydroxyanisole , propyl gallate (PG), butylated hydroxytoluene (BHT) and tert-butyl hydroquinone (TBHQ). However, these synthetic antioxidants have side effects such as liver damage and carcinogenesis. There is a need for isolation and characterization of natural antioxidant having less or minimal side effects,for nutrients or medicinal materials to replace synthetic antioxidants.
