Species in the genus Sporosarcina were isolated in the highest
numbers from Myeolchi-jeot, but they were not isolated from Saeujeot.
They were intolerant to saltlevels greater than 10% NaCl (Table 3),
and no proteinase-producing strain was isolated in this research. The
isolation of a high number of Sporosarcina spp. could be restricted to
a selected sample. Um and Lee (1996) measured the numbers of
Staphylococcus spp. in 40 kinds of jeotgal by counting the numbers of
colonies that appeared on mannitol salt agar. Staphylococcus spp. at
over 100 CFU/ml were detected from most of the jeotgal samples, but
they were not detected at all in other samples. The detection of
Staphylococcus spp. depended on the selected specimens rather than
on the actual kind of jeotgal. This suggests that both the matrix
composition and also the fermentation parameters play a defining
role in the community of microorganisms.
