Cauliflower does not look as colorful as the green and orange vegetables. It lacks the green chlorophyll found in other cruciferous vegetables like a broccoli,cabbage and kale, because its leaves shield the forests from the sun as they grow. Cauliflower contains naturally occurring substances called purinnes. In some individuals an excessive intake of these substances can cause helth problems. Too high a level of purines can lead to exessive uric acid inthe body. Gout and kidney stones are two examples of uric acid-related health problems connected to an excessive intake of purine-containing foods. For this reason, individuals with kindney problems or gout may want to limit or avoid the intake of purine-containing foods such as cauliflower.
