Another possibility is that these polymerized
tannins form thicker adsorbed layers engendering a steric
repulsion between droplets, which are then less subject to flocculation
or to coalescence. Last, in the case of stabilization by tannin
particles, it was shown that oxidized tannins have a stronger propensity
to form particles (Zanchi et al., 2007).
As grape seed tannins with the highest molecular weight
(G15ox) were the best candidates, they were thus used for the
parameter optimization.
