Higher pulp carotenoid concentration in ripe fruit
of the two cultivars studied was related to the deepness of the yellow
color. This was reflected in the measured lower hue values and
higher b⁄ values in cv. Chanee, compared to cv. Monthong. The data
would agree with Khoo, Ismail, Mohd-Esa, and Idris (2008), who
tested several fruit, noting that those with higher carotenoid concentrations
were more yellow.
