This method is widely used for the peeling of fruit and vegetables and is capable of giving very satisfactory results. The process consists of passing the product to be peeling through a bath of sodium hydroxide solution , or lay as it is usually called. Peeling 300 gm of potatoes or apples by passing through 30-50% solutions of NaOH, time of immersion vary from 0.5 to 5 minutes and record the percentage of waste and some remarkable of peeling potatoes.
