Three different yeast strains of S. cerevisiae were used for laboratory experiments. Strains designated as DV 10, Fermol and Syrah, which were produced by Lalvin kindly gifted by EnoChimiki S.A. Athens Greece, Speedal S.A. Thessaloniki Greece and Martin Vialatte, were kindly gifted by Ampeloiniki S.A. Thessaloniki Greece.
