3.3.2. Thiobarbituric acid reactive substances (TBARS)
TBA value has been widely used to reckon the degree of lipid
oxidation and the presence of TBA reactive substances is on account
of the second stage auto-oxidation during which peroxides are
oxidized to aldehyde and ketone. In Fig. 5, the TBA values for the
different treatment groups during refrigerated storage are presented.
The initial TBA values ranged from 0.51 ± 0.11 to
0.66 ± 0.12 mg MDA/kg of fish. TBA values of the controls (C and AC)
and coated samples (Ch and Nch) increased with storage time.
However, on days 9 and 12, Ch and Nch coated samples had
significantly lower TBA values than the controls (P < 0.05), while
there was no significant difference between Ch and Nch groups
