The effect of M/S ratio on the amount of cAA seems to be very
modest in the studied range. The lowest decrease can be observed
for M/S = 1/10 g/mL. At lower temperatures cAA does not change
over te. The highest amount of cAA is observed at Te = 100 C and
is approximately 3.51 ± 0.11 mmol/g. The higher values of ACW
at lower temperatures are probably due to the presence of nonhydrolysed
glycosides and quinic acid esters in the samples. Also,
these compounds are generally more soluble in water at ambient
conditions.
