While the declines in protein
during storage can mainly be attributed to the degradation
of enzymes needed for functional chloroplasts,
the induction of enzymes involved in the dismantling
process of programmed cell death (Gan and Amasino,
1997) and enzymes such as the pathogenesis-related
proteins might also increase the total value of proteins
(Smart, 1994; Gan and Amasino, 1997).
