The relatively small volumetric mass transfer coefficients measured
in experiments 8 and 9 could also be due to the high dispersed
phase viscosities observed in these trials (Table 3).
According to Cláudio et al. [41], low-viscosity systems favor the
mass transfer of the solute between the two phases. Thus, the high
viscosities of the raffinate phases in experiments 8 and 9 might
have impeded the free fatty acid diffusivity. In addition, the large
volumetric mass transfer coefficient obtained in experiment 7
could have resulted from the large difference in the concentrations
