Peel the eggs when you're ready to eat them. Roll each egg on a flat surface to crack the shell. Start peeling from the fatter end of the egg, where there should be a slight indentation under the shell. This makes it slightly easier to remove the shell. Rinse the eggs under cold water as you peel them, to keep little shell bits and membrane from sticking to the egg.
