8. Get any remaining gel by running your knife along the green scraps.
9. Drips a bit of fresh lemon juice over the gel to make it last longer. You will need about a quarter lemon for each cup of gel. Shake the jar so it will coat evenly.
10. You can also smash the gel into a smoother form by proceed it in your food processor.
11. Keep it in a sealed jar and put it in your refrigerator. Keep it for a week.
