13.2 %, respectively. As in other squid species [25], the jumbo
squid hydrolysates were rich in taurine. The hydrolysates
obtained at pH 5.0 contained more taurine than the hydrolysates
obtained at pH 7.0. The hydrolysates obtained at pH 7.0
had higher total imino acid and hydrophobic amino acid
levels.Methionine was the limiting amino acid in both hydrolysates.
Similar amino acid composition results for different
squid species have been reported [8, 9, 26]. Imino acids are
abundant in squid connective tissue and skin, which contain
collagen [27]. The higher Gly, Hyp, and Pro levels in both
hydrolysates indicate that more connective tissue was present
in the raw material.
