This area covers rings, which are conventional donuts with a hole in the middle, shells, which are round and usually filled, long johns, also normally filled but cylindrical in shape, and twists, made by braiding or twisting together one or two pieces of dough. When considering what we want in a finished product, we must look at the basic formulation and the ingredients. First we must consider the flour. Too often this ingredient is not taken into consideration, in spite of the importance that it commands, since at times, one flour might not be correct for a specific formulation. I will briefly set a few basic guidelines for the flours.
