During data
analysis, different reference temperature values (within the tested
temperature sweep test range) were used in order to model the
viscoelastic parameters of G0 and tand, which enabled the development
of reliable equations fitting best the viscoelastic behaviour of
ice cream. According to this criteria, storage modulus at the reference
temperature of 0 C (G0
Tref¼0 C) and damping factor at the reference
temperature of 8 C (tan dTref¼8 C) were selected in order
to facilitate the development of accurate and valid kinetic models.
Storage modulus at the test reference temperature of 0 C was
plotted against storage time for each storage temperature.
