Biscuits usually have a reasonably high butter, egg and sugar content, making them sweet and moist. Because they are moist, they do not usually have a long shelf life as exposure to moisture makes them soften and go stale quickly. After cooking and cooling completely on a wire rack, store them in an airtight container. Refrigerate if the weather is hot. If a batch lasts long enough in your household before being consumed, you can freeze half of them in an airtight container for up to them in a month. Layer the container between sheets of baking paper. If biscuits have softened, they can be refreshed by placing them, in a single layer on a baking tray, in a warm 160 C (315 F/ Gas 2-3) oven for about 5 minutes. Cool them on a wire rack.
