Differential scanning calorimetry
Differential Scanning Calorimetry (DSC) technique was
applied with a DSC 204F1 NETZSCH (France). First, an
emulsion sample of about 10 mg was placed in an aluminum
pan, hermetically sealed before being placed in the
calorimeter thermocouples.
The samples were then heated from 20°C to 60°C in
5°C/min heating increments, to eliminate initial thermal
history (equilibrated at 60°C), and then cooled down to
-60°C following the same process (equilibrated at -60°C).
The samples were then reheated to 60°C, in 5°C/min heating
increments as well.
