De Ancos et al. (2000) observed greater degradation of
cyanidin-3-glucoside (between 15 and 40%) as compared to the
other anthocyanins analyzed during the storage of raspberries at
20 8C for 1 year, the losses being more accentuated in the lateharvested cultivars, probably due to cell damage caused by
freezing, liberating the enzyme polyphenoloxidase.
