Hairtail-FHP showed the most potent ferrous-chelating and
antioxidant activities among all the tested FHP. Amino acid
analysis revealed that the His content in hairtail-FHP was
higher than that in the other FHP. This result suggests that
the His content in FHP is crucial in ferrous chelation and antioxidation. The antioxidant ferrous-chelating peptide
fractions from hairtail obtained by enzymatic hydrolysis
and ferrous chelation might be useful as food additives, diet
nutrients and pharmaceutical agents.
