Fried Fish with spices and herbs
Ingredients
4 pieces of pollock
4 tbsp neutral oil
For the marinade
1 tbsp chilli pd or paprika powder
½ tsp turmeric
1 clove garlic, crushed
3 cm fresh ginger, crushed
6 stems coriander leaf
3 mint leaves
1 tsp chickpea flour
¾ tsp sea or kosher salt
1 tps vinegar
Method:
Crush together the salt, garlic and ginger to make a fine paste.
Mix all other marinade ingredients in a flat dish.
Add the fish and rub the marinade all over.
Marinate for at least ½ an hour.
Heat oil and pan fry the fish.
