The yield of tofu was 2.75 g fresh tofu per gram dry
soybean (404 g fresh tofu from 147g dry soybeans in
starting material), and the tofu contained 36% of the
isoflavones presented in the starting material (i.e. 260
mg isoflavones in tofu relative to 720 mg isoflavones in
raw soybeans, Table 2).
