3.3. Microbial analysis
No significant difference was found among prototypes for all microbial analyses tested during storage (data not shown). Neither type of snack nor storage influenced a number of microorganisms.
The total plate count was less than 1 103 cfu/g within the 6 months of storage and no E-coli (cfu/g) and Salmonella (cfu/g) were detected. Counts (cfu/g) of coliforms, sulfite-reducing clostridia, mould and yeast were less than 10 throughout the study indicating that the products were microbiologically safe and stable (ISIRI, 2008a; Jay, 1992).
