Total phenolic compounds were determined according to the methodology
of Rodríguez-Roque et al. (2013a), using the colorimetric method
previously described by Singleton, Orthofer, and Lamuela-Raventós
(1998). A calibration curve of gallic acid was used to quantify the concentration
of total phenolic compounds in each sample. Results were
expressed as mg of gallic acid/100 mL of sample.
