The yield and TA of the SC-CO2 extracted color having nature identical purple appearance (R/Y = 6.32, B/Y = 5.44) decreased with increasing temperature at 10 MPa.
However, at relatively higher pressure regimes (12e15 MPa), retrograde phenomenon of supercritical extraction was observed
It can therefore be concluded that the optimum SC-CO2 conditions for extracting colors from eggplant peels with high anthocyanin content (17.04 g kg1 of dry weight of peel) were 60 C, 10 MPa.
ANOVA study also indicated that extraction temperature has significant effect on the yield and TA of the extracted color (p = 0.0435); whereas, extraction pressure does not affect the same significantly (p = 0.6833)
It could also be concluded that there are no significant differences in TA (p ¼ 0.9138) of the colors extracted by the two extraction procedures.
