2.5. Zeta potential measurement
The zeta potential of the egg white solution was measured according to Chen et al. (2012), at 25C by a Zetasizer Nano ZS
(Model ZEN 3600; Malvern Instrument, Inc., London, UK).
The viscosity and dielectric constants of the samples were determined by using a combination of Electrophoresis and Laser Doppler Velocimetry techniques.
Selected Smoluchowski Model (f(ka) = 1.5) as default setting on the Zetasizer Nano ZS. Zeta potential was calculated
by application of Henry Eq.
