Potatoes available all year round and usually classified as either floury or waxy, this versatile and popular vegetable comes in many shapes, size and colours including long white, round white and rounded. Potatoes range in size from small new potatoes, which are ideal for boiling and for salads, to large baking potatoes, which are excellent for baking in their skins or for making chips. Sweet potatoes are not botanically related to the potato, but they have a delicious sweet flavour and can be substituted for potatoes in many recipes. When cooking potatoes, you can either peel them first, or simply scrub them and leave them unpeeled. Potatoes skins are very nutritious, and delicious when cooked, so it is often a good idea to leave the skins on, unless you are making mashed potatoes, when it is better to remove them. Potatoes are excellent boiled, mashed, fried, baked and roasted. You can serve them hot or cold. After buying your potatoes, store them in a cool, dark place.
