What is a menu?
● Montagne (1977) defined a menu as ‘a sheet of paper or cardboard on which is written, in a specific order, the names of all the dishes which are to be served in succession at a given meal’
● Fuller’s (1981) ‘a menu must fulfill its function of “communication” or informing a diner accurately about what is offer to him’.
Why study the menu?
Following are detailed reasons why you should study the menu:
1.Study the menu frequently because it may change occasionally or even daily. Check with the chef if you see any new specials or menu items. Selections may change to give variety to the menu, and prices may change according to ingredient cost or seasonal availability of food items.
