Enumeration of viable cells was obtained by using theLIVE/DEAD®BaclightTMBacterial Viability kit (Molecular Probes,Oregon, USA) and fluorescence microscopy [12]. One milliliters of100-fold diluted NWC, and 1 mL of vat milk were used. The gratedcheese homogenates in trisodium citrate (15 mL) were centrifugedat 10,000 rpm for 10 min at 4◦C.
