A succession of thermophilic species convert organic matter to a range of
Volatile and non—volatile byproducts. Sucrose and reducing sugars are readily
consumed followed by hemicellulose, cellulose and lignin. The predominant by-
product compounds identified include ethanol, acetic acid, fujrfural, acetoin,
diacetyl and carbon dioxide. A multitude of other organic compounds may be
produced but the types and concentrations have yet to be quantified. Micro-
biological activity in the stored bagasse is primarily dependent onthe availability
of free Water. Activity is maximised at bagasse moisture contents greater than 60
per cent (wet basis). Below 40 per cent moisture content the activity is significantly
retarded and ceases below 25 per cent moisture.
