Adding 0.1 M metal ions to the glucose/alanine model system,
except for sodium sulphite, increased furan concentration to
27.31 ± 4.61 ng/ml with iron sulphate, 23.28 ± 1.89 ng/ml with
magnesium sulphate, 44.63 ± 1.95 ng/ml with zinc sulphate and
17.40 ± 3.88 ng/ml with calcium sulphate, respectively. In contrast,
furan decreased 3.47 ± 1.00 ng/ml with sodium sulphite. Furan
increased 13.57 ± 3.09 ng/ml with BHT but decreased
7.97 ± 0.96 ng/ml with BHA. In particular, adding sodium sulphite
resulted in the lowest furan concentration of 3.47 ± 1.00 ng/ml.
Furan also increased significantly in the case of the glucose/serine
model systems including 0.1 M metal ions, except sodium sulphite.
The formation of furan ranged from 27.84 ± 4.29 ng/ml to
99.35 ± 1.61 ng/ml in systems containing 0.1 M metal ions.
Additionally, antioxidants increased furan concentration to
13.72 ± 2.03 ng/ml with BHT and 16.99 ± 1.81 ng/ml with BHA,
respectively. Adding sodium sulphite led to a significant decrease
in furan concentration to 3.05 ± 1.15 ng/ml.
