cocktails with ingredients that do not mix very well together such as juices,egg white,cream,sugar syrup etc., need to be shaken. first 1/2 fill the shaker with ice. then add ingredients such as cream and fruit juices before adding the spirits. shake vigorously with as snapping motion, so that the ice hits that top and bottom of the shaker ( not side to side ). Do not shake longer than 10 seconds otherwise the drink becomes watered down. Shaken cocktails are strained into the the customer's glass leaving the ice behind. Ice should only be placed in the customer's glass if the recipe demands.
