Vapor Compression Evaporator
This is a sap pre-processing system. Cold sap is pre-heated in a heat exchanger and is piped to the sap sprayer. In the evaporation chamber, captured steam is removed and compressed to raise its temperature. The sap is sprayed into steam-heated pipes and more steam is liberated. The sap concentrate passes back through the heat exchanger to help raise the temperature of the incoming raw sap. The vapor compression evaporator has the capability of producing concentrate between 10 and 18% sugar or possibly higher. The sap concentrate is then finished in a conventional evaporator to obtain the characteristic maple flavor.
