trained sensory panel evaluated samples containing different
antioxidant levels only by way of this attribute,
during the storage time for the control treatment. On
the other hand, the correlation coefficients between the
sensory scores and TBARS values, pooling information
within treatments for each time of storage, did not show
significant correlations (P>0.05), except for overall
acceptance at 75 days of storage (Table 3). Low correlation
between sensory scores (overall acceptance) and
TBARS values, which could be due to the use of an
untrained panel, since linear correlations of sensory
scores with other measurements are difficult to attain
(Lai, Gray, Booren, Crackel, & Gill, 1995).
