1. For making curry paste,ground all ingredients together until smooth.
2.Mix the pork drumsticks with black soy sauce and curry powder.
3.add cooking oil.
4.Stir - fry curry paste for a minute, then add pork.
5.Stir 2-3 times.
6.Pour in water and bring to the boil.
7.Cook for 5 minutes. Add ginger root, garlic, fish sauce, sugar and tamarind juice. Stir 2-3 times for a minute. Cover. Simmer for l0-15 minutes.
8. Remove from heat.
