Optical micrographs and droplet size distributions of the emulsions after storing quiescently at ambient temperature for 30 days are shown in Fig. 3aee.
Droplet size of all the emulsions increased to a different extent. The emulsion with no maltose contained some large droplets and small droplet flocculation, and had a broad droplet size distribution, ranging from 1 to about 150 mm (Fig. 3a).
The droplet size of the emulsions containing different maltose contents was relatively uniform, and the size was mainly distributed in the range of 1w25 mm(Fig. 3bee). The droplet size displayed uniform, and flocculation decreased with increasing
maltose content.
