2.8. In-vitro bioaccessibility studyAbsorption of anthocyanin into the gastrointestinal tract can be visualised by in-vitro bioaccessibility study. Two steps are involved in this study: digestion for 2 h with pepsin enzyme along with HCl (pH 1.7) that simulates the gastric condition and digestion for another 2 h with bile salt along with pancreatin enzyme that simulates small in- testinal condition.
