Hi Shane, The Sous Chef (sauce) chef is usually second in command in the kitchen.There are various chefs /titles of chefs in a Brigade. It would only be in very large establishments that you would have a chef dedicated just to soup although nowadays he would usually be the vegetable chef. is that like french for a chef that just makes soup?
