As with any dish in Thailand, Massaman curry can vary greatly especially when it comes to cream and spice levels. Massaman gets it’s flavour from a mixture of ingredients including coconut milk, peanuts, potatoes, fish sauce, chilli and tamarind.
It’s a soupy consistency (similar to green curry) and like Tom Yum can have a variety of proteins in the sauce. My favourite is chicken because it is basically poached in the curry sauce and falls apart in your mouth.
