The microstructure of the protein particles was analysed by
light and scanning electron microscopy (SEM). For imaging the particles
in the water-in-oil emulsion, the sample was washed with
hexane. A drop was transferred to a silicon wafer which was
mounted onto an aluminium pin. After the hexane evaporated,
the samples were sputter-coated with 20 nm gold-palladium
(Emitech k550, UK). For imaging the particles in the final aqueous
dispersion, circular 13 mm carbon planchets (Canemco Quebec)
were polished to a mirror finish.
