In this work, appropriate moisture level was preferable for the crystalline formation and subsequent increase in moisture would decrease the crystallinity after HMT. The X-ray pattern of mung bean starch showed that moisture level had impact on diffraction intensity and relative crystallinity. So it is important to select appropriate moisture to control the change in X-ray intensity and prevent disrupting the original and newly developed crystallites. In this study, mung bean starch with 20% moisture treated with HMT at 120 _C for 12 h is favorable for RS formation.
