In summary, the present study has shown clear
differences between bulls and heifers slaughtered at
two fixed ages in relation to performance, carcass
traits and meat quality parameters. The bulls grew
faster and more efficiently, had a higher killing-out
proportion, and produced leaner carcasses with a
