Germinated brown rice (GBR) is ordinary brown rice soaked in
water in order to initiate budding (Komatsuzaki et al., 2007). Hydrolytic enzymes are activated during germination process and high molecular weight polymers are broken down, therefore, oli-gosaccharides, amino acids and other bio-functional substances are formed.
