Microwave heating could be described as a process that transfers the electromagnetic energy to thermal energy; it generates rapid volume tricheating of a wet material by alternating the electromagnetic field to interact primarily with the polar water molecules and ions, which results in great advantages in drying rate using microwaves processing materials (Qiao et al., 2010).Because microwaves can penetrate into materials and deposit energy, heat can be generated throughout the whole material simultaneously (Li et al., 2008), thus significantly accelerate the drying process. Microwave drying had been successfullyapplied in the food drying field, recently. Kouchakzadeh andShafeei (2010) had found that with the increasing dryingtime, moisture ratio showed the trend that rapidly decreasing first then very little reduction.
