Using maple syrup 30◦Bx, the highest yield of the transfructosylation
products of 33.10% and 31.02% was achieved upon 24 and
48 h of reaction at 30 and 8 ◦C, respectively, using 6 U/mL. Contrary
to maple syrup 15◦Bx, the use of lower levansucrase units (2 U/mL)
led to a lower maximum yield of the transfructosylation products
of 28.20% in maple syrup 30◦Bx.
