From the Fick's and Barbosa Júnior et al. models, the diffusivity values are not the same for the WL and SG. The values of the diffusivities obtained with the Barbosa Júnior et al. models for the WL were always higher than the ones for the SG, which is a coherent representation of the experimental data. The Fick's model did not represent well the situation for maltodextrin-NaCl. Thus, the Barbosa Júnior et al. was more appropriate for fitting the osmotic dehydration.
The diffusivities obtained with PVOD were higher than the ones obtained with OD. This trend was the same for the three tested models and represented very well the experimental situation.
