Water activity is a parameter thatdetermines the stability of the food with respect to ambient humidityand was measured for both fresh and dried leaves, before and after thedrying process, utilizing the portable Rotronic HygroPalm, with anaccuracy of ± 0.01% mg. A mean of three measurements werereported at a room temperature of 24.5 ± 1 °C.
