However, using mineral acids for the extraction of pectin causes increased costs for manufacturers and problems for the environment [7]. Extracting pectin without mineral acid can be an environmentally friendly process. In this study, water as the extraction solvent was used. Aqueous extraction is a traditional method of extracting polysaccharides. In this method, different factors affect the extraction of pectin from plant resources, such as extraction temperature, time and liquid/solid ratio (LSR), therefore, factors must be optimized to achieve maximum extraction yield [17]. Hence, this research aimed to optimize the process variables on the aqueous extraction yield of sour orange peel pectin to achieve maximum yield using a three factors three level Box–Behnken response surface design and also to study of physicochemical properties of pectin extracted.
