[39]. The binding of gelatin to BSATA at q = 0.5 and q = 1.0 caused only a decrease in band intensity without any significant shift of the peaks, clearly indicating that gelatin induced a slight decrease
in the -helical structure content of BSATA. The -helical content
of BSATA was calculated according to Luo et al. [31,32]. The calculated results displayed a reduction of -helical structure from 51.4% to 44.6% at a weight ratio of BSATA to gelatin of 1:1. From
the above results, it was apparent that the effects of gelatin on BSAcaused a secondary structure change of the BSATA, with the loss of-helix stability. Increase gelatin content in the mixture from q = 1
to q = 2.0 and 4.0 do not effect on CD spectra of the BSATA(data not shown).
