Mix together crocodile meat and galingale, pepper, paprika, soy sauce at least 10 mins.
Put oil in a pan. Then add ginger, onions, garlic and chilli curry. Stir-fry until fragrant.
Add Kaffir-lime-leaves and thai basil.
Add crocodile meat, stir-fry until meat is cooked through.
Add green part of spring onions and season to taste.
Lastly, drizzle a bit of sesame oil and serve with plain rice.
